In contrast: Ribera del Duero red wine vineyards are at a much higher elevation, giving the wines higher, more refreshing acidity. To take advantage of their high elevation vineyards and special terroir, they have been lavish with the use of new French oak. A chemist by training, Javiar is constantly experimenting.
