By 5:45, Pingle and Moghul’s sales manager, Neeraj Shokeen, stack extra large Tupperware boxes of curry bases and unassembled dish components they’d prepped the night before into a truck. Moghul’s cocktail hour has enough stations to pass for a food festival.
