Technomic’s College and University Trend Report found that 42 percent of Gen Z are interested in street food on menus, proving this drive for authentic cuisine and the ability to influence food culture. However, this generation's desire for authenticity extends beyond the plate, with a restaurant's ambiance, branding and overall narrative playing crucial roles in their dining choices. Gen Z is keenly aware of what social media follows and they’re eager to see if the hype is real by showing up and trying new food experiences.

Gen Z demands transparency and ethical practices in the food industry. They drive the demand for clean labels, responsibly sourced ingredients and sustainability. They champion farm-to-table movements, support local businesses and are conscious of the environmental impact of their dining choices. Restaurants that provide clear information about the sourcing of their ingredients and the ethics behind their operations are likely to win the loyalty of this conscientious cohort.

According to a National Restaurant Association Show presentation, Gen Z consumers care more about authenticity, convenience and aesthetics than price value. Going deeper, we also see differences in behavior within the generation as the older Gen Z wants convenience, and the younger cohort wants good vibes and social and fun experiences.

Gen Z is arguably the most diverse American generation to date, both ethnically and culturally, which deeply influences their expectations for dining. They seek establishments that reflect this diversity not only in the menu options but also in the staff and management teams.
