Higata Oysters Flavor Profile

Higata Oysters TasteHigata Oysters are a new oyster released in 2020, created by Pacific Coast Oysters company which is owned by PacSeafood. They are essentially a “sister” of the Shigoku oyster in that they are a Pacific Northwest oyster cultivated in the Willapa Bay oyster appellation in Washington State using the same specialized tidal-tumble suspension tray method used for Shigoku oysters.

The cultivation method uses a stationary line of suspension baskets which are attached to floats in such a manner that as the tides ebb and flow the tray is naturally raised and lowered causing the oysters to be tumbled. Thus, Higata oysters are tumbled twice a day with the tides, which chips the edges of the shells resulting in a uniquely smooth, “clean” edge and deep cups.

They are currently only available (February 2020) in a 5 dozen pack size which arrives in a beautiful box. Higata oysters are about 2″ to 2 1/2″ in size, they are set in deep cups, have a buttery texture, a sweet taste and a crisp melon finish. They are from a 4 star BAP oyster farm which is the only BAP certified oyster farm in the world.

Oyster Flavor Profile Higata Oysters have smooth shells with deep cups and buttery textured meats. They have a briny bite, a clean, sweet flavor with a crisp melon finish.

Higata oysters come hand packed in a nice box with the oysters individually arranged on trays for safe travel. A foam material to hold the oysters in place during shipping and frozen gel bag were inside the box I received.
