Zen oysters are from Denman Island in Baynes Sound in British Columbia. They are a deep water tray-grown oyster that is also frequently tumbled which develops distinctively sculpted shells with deep cups and moderately firm meats. They are available in extra-small and small sizes, are sustainable and Ocean Wise approved, and are designed to be a competitor of the famously popular Kusshi oyster.

Zen oysters have a moderate salinity with firm, plump meats, a mildly sweet flavor, and a delicate melon finish. The shells typically have a purplish-white color and a sculpted, easy to shuck hard shell, evenly shaped and free from barnacles due to the repetitive tumbling process during grow out. They are grown in the deep, cold waters off of Denman Island to eliminate spawning. They are cultivated along with 2 other varieties by oyster farmers Greg & Hollie Wood at Hollie Wood Oysters which has been family owned since 1996.
