The 40 Most Anticipated Restaurant and Bar Openings in Las Vegas This Summer

Resorts World brings a massive roster of restaurants and bars when it opens on June 24. Don’t let that overshadow some of the bigger openings on and off the Strip.

If the summer of 2021 promises anything, it’s a boatload of new restaurants and bars to explore. Resorts World opens on the north end of the Las Vegas Strip with 40 food and beverage outlets from big restaurant names such as LA chef Ray Garcia and Las Vegas’s own Nicole Brisson to Champagne bars and a rooftop lounge for dreamy views of the city. Todd English brings back Olives to the city, this time at Virgin Hotels. A second Sugar Factory American Brasserie promises three levels of sugar highs on the Strip, while Wynn Las Vegas finally debuts Delilah, its over-the-top supper club with H.wood Group.

Off the Strip promises even more new restaurants to explore from a long anticipated hot chicken enclave, a Big Boy in Centennial, a Chinatown fast-casual döner experience, and a breakfast, lunch, and pizza restaurant from Mindfreak Criss Angel.

Todd English’s Olives

Location: Virgin Hotels

Projected Opening: June 2021

Virgin Hotels opened on March 25, and the resort with three hotel towers features more than 1,500 rooms and suites; a 60,000-square-foot Mohegan Sun Casino, operated by Mohegan Gaming & Entertainment; a five-acre pool with an event lawn; live music with space for 4,500; a showroom for 650; and 12 food and beverage venues. Still waiting to open — Todd English’s Olives, which returns to Las Vegas after a three-year-hiatus after departing the Bellagio in 2018. The Mediterranean restaurant features pastas, wood-fired flat breads, and seafood dishes.

Location: Wynn Las Vegas

The Players: L.A.’s H.wood Group — which runs The Nice Guy, Peppermint Club, Poppy, Petite Taqueria, and Bootsy Bellows

Projected Opening: July 2021

A dash of roaring ’20s-inspired supper club with West Hollywood roots takes over the former Alex space at Wynn Las Vegas. Delilah, the glossy restaurant and lounge decked out in plush seats serves big dinners and bottle service with entertainment on stage. Servers wearing white jacket tuxedos and flapper dresses and a band playing on stage set the entertainment vibe of the space designed by Todd-Avery Lenahan, president of Wynn Design + Development. The Art Deco-inspired restaurant includes “Frank Lloyd Wright-inspired palm tree columns.”

Resorts World

The $4.3 billion Resorts World opens on the north end of the Las Vegas Strip on June 24 with more than 40 restaurants and bars, three hotels with 3,500 rooms, and an unmissable 100,000-square-foot LED screen on the exterior of the resort touted as one of the largest in the world. Here’s a look at some of the standouts.

LA chef Ray Garcia opens ¡Viva! with regional Mexican cuisine. Resorts World calls the project a “collaboration with Esquire magazine’s Chef of the Year in 2015, set in a contemporary space with a colorful design.”

Brezza and Bar Zazu

Nicole Brisson, who was a James Beard Foundation semifinalist for Best Chef Southwest in 2020 while she was at Locale Italian Kitchen, opens two new outlets at the resort this summer with former Mina Group vice president Jason Rocheleau. Brezza plans to serve coastal Italian fare such as handmade pastas, seafood, Brisson’s “hand-selected heritage breeds,” and Creekstone Farms beef, paired wines from Italy and the Italian digestif amari.

Bar Zazu from Brisson and Rocheleau brings a European café serving hot and cold tapas, cheese and charcuterie, and sweet and savory pastries, along with wines by the glass, bottle, and flights. Beers and cocktails spotlighting different regions of Europe round out the restaurant’s menu.

Famous Foods Street Eats offers 16 food stalls spanning dumplings and lechon to fried chicken and barbecue. Marcus Samuelsson’s Streetbird Las Vegas with sweet and spicy fried chicken, hot honey chicken and waffle, chicken wings, and mac ’n greens joins other hawker stands such as Hong Kong’s Ah Chun Shandong Dumpling; Singapore’s Geylang Claypot Rice; Bangkok, Thailand’s Ten Suns Braised Beef; Singapore’s Springleaf Prata Place; Manila’s Pepita’s Kitchen with lechon; Steve and Kevin Aoki’s Kuru Kuru Pa Yakitori, and more. Here Kitty Kitty Vice Den brings a grunge speakeasy tucked away with cocktails.

Other options on the way:

Genting Palace with Cantonese cuisine, seafood, and dim sum from parent company Genting Group. The restaurant, which originally opened in 1965, specializes in marble goby and braised traditional pork spare rib cutlet.

Kusa Nori, a sushi bar with teppanyaki grills. The Japanese restaurant plans to serve yakitori and teppanyaki dishes and stock a large menu of sake.

Zouk Nightclub and Ayu Dayclub bring the club scene the resort.

Zouk Group’s RedTail, a social gaming bar, and Fuhu with Asian dining.

Wally’s Wine & Spirits brings a restaurant, wine bar, and specialty gourmet market with a mind-bending 8,000-plus labels to the neon of Vegas.

Gatsby’s Cocktail Lounge, the new bar from Clique Hospitality, specializes in Champagne-based cocktails off the casino floor.

DawgHouse Saloon & Sportsbook features a Nashville sports bar next to the sportsbook.

Sugar Factory American Brasserie gets ready to open a three-story location on the center of the Las Vegas Strip this summer. The 14,000-square-foot location takes over the former Twin Peaks space at Harmon Corner, keeping the indoor climbing wall and replacing the footings with candy dots.

The new location features a walk-up goblet bar on the pedestrian bridge between Las Vegas Boulevard and Harmon Avenue that overlooks the second-floor dining room and a retail candy store with more than 500 types of candy and two cases filled with homemade ice cream and gelato, milkshakes, pastries, and coffee options. For dining, 230 seats indoors, a 36-seat entry-level bar, a 30-seat carousel bar on the mezzanine level, and a 30-seat outdoor patio outfitted with fire pits that overlook the Las Vegas Strip.

Philadelphia sports bar staple Chickie’s & Pete’s is part of the resort’s $150 million remodel that brings big changes to the Strip-facing exterior. The sports bar specializes in crab fries with crinkle cut fries with “crabby” spices served with two sides of creamy cheese sauce, bowls of red or white steamed mussels, a two-pound Dungeness crab, snow crab, jumbo crab cakes, and Lisa’s Blonde baby lobster thin crust pie. All bets are on this being a hangout for Eagles, Phillies, Flyers, and Sixers fans.

Mr. Fries Man, a California cult-food sensation that only recently opened in North Las Vegas, is confirmed to replace the 1,350-square-foot Subway store at the Flamingo Market Place. The compact, counter-service menu specializes in big-appetite portions and the opportunity to customize each dish. Fry meals are served with cheese and a choice of sauce, plus piled high servings of barbecue, bacon, ranch and chicken, lemon garlic crab and shrimp, a chicken, bacon and Parmesan combination, and plates topped with honey garlic shrimp and steak. A plant-based option is also available.

A 3,000-square-foot Big Boy opens at Skye Canyon Marketplace, taking over a convenient end space, with plenty of room out front for one of the legendary grinning Big Boy statues. The retro roadside coffee shop franchise continues its 71-year tradition of booths and lunch-counter seating inside. Famed for its namesake “double deck” burgers, thick old-fashioned milkshakes, and a full menu of classic American dishes, Bob’s Big Boy already opened inside the Terrible’s Indian Springs, a 29-mile drive to the northwest from this new location.

La Neta Cocina y Lounge takes over the former Blue Ribbon Fried Chicken space, as well as a vacant location next door, to bring a 5,336-square-foot restaurant filled with stained glass murals and modern takes on traditional Mexican fare along with mezcal and margaritas. Ryan Labbe and his company, 81/82 Group, created the restaurant that features lavish decor such as stained glass murals and exposed brick walls accented by wooden beams and vaulted ceilings. Overhead, chandeliers light the space, while a living tree anchors the dining room. The lounge at La Neta features a living wall art installation decorated with greenery, creating an indoor garden. Chef Israel Castro, a veteran of restaurants such as Javier’s at Aria, created the menu of lobster enchiladas, roasted acorn squash, and churrasco with marinated skirt steak, polenta, and mezcal onion butter. Over-the-top options meant to share include a six-pound cochinita pibil; paella with shrimp, calamari, lobster, oysters, and white fish; and WTF with six pounds of beef short ribs braised in ancho chili sauce served on a bed of truffle polenta topped with crispy onions.

Slowed by the challenges of building from scratch but still confident of a summer 2021 opening, California’s Dave’s Hot Chicken features tenders served with sliced bread and pickles, with sliders accompanied by kale slaw. Sides include mac and cheese, regular, or cheese fries, plus Dave’s house sauces ranging in spice levels from zero, all the way up to the fiery “reaper.”

A Hawaiian favorite for breakfast burritos, plate lunches, and sandwiches lands its first of two locations in the Ninth Island this summer. Kono’s out of Haleiwa plans to open two locations this year, with the first opening near Summerlin in late July or early August and a second debuting in Chinatown in September or October. Kono’s specializes in slow-roasted kalua pork that comes swaddled in breakfast burritos dubbed bombers, wrapped in sandwiches, and as the star of the show in plate lunches.

Cablp — short for Criss Angel’s breakfast, lunch, and pizza — opens in July with fast-casual fare and more. Angel discovered the restaurant while dirt biking with his family in the Moapa Valley near Valley of Fire State Park. He teams up with his brother Costa Sarantakos and pizza maker Mike Baram to convert the restaurant into the fast-casual Cablp (pronounced Ca-blip) with a July opening on the horizon.
